You may ask why Sencha style green tea was chosen for this blend. Well, green tea is produced by forgoing the fermentation process required to product black tea.  Instead, the leaves are steamed as soon as they are plucked, then bruised by machine or by hand. The leaves are then pan-fried or basket fired - a process that gives the tea its distinctive glossy look and feel. It is this manufacturing process that also gives green teas, and this Sencha in particular, their light sweetish flavor - a perfect match to the fresh flavor of the Long Island strawberry. Smell the green tea, real strawberry and papaya pieces (added to enhance the profile of strawberry), and imagine yourself cruising in the countryside.

Hot Tea: Put 1 slightly heaping tsp of loose tea for each 7 - 9 oz of water in the teapot.  Pour freshly boiled water over tea - steep 3 - 7 minutes. Milk and sugar are not recommended.

Iced Tea (1L/QT): Put 6 slightly heaping tsp loose tea into teapot.  Pour 1 1/4 cups of boiling water over tea.  Steep 5 minutes. Quarter fill serving pitcher with cold water. Pour into pitcher straining tea. Add ice, top-up with cold water, garnish and sweeten to taste.
